Tomato Basil Shrimp Scampi with Zucchini Noodles

Before I share this recipe, I have to come clean about something…

I don’t like seafood.

I know, it’s blasphemy. I have tried MANY things, but I just can’t get over the texture and taste of seafood. I have tried shrimp, lobster, salmon, crab legs, calamari, perch caught fresh from Lake Erie…you name it and I’ve tried it.  I can  occasionally handle a flaky/mild fish like tilapia if it’s heavily seasoned. When I say heavily seasoned I mean blackened tilapia…so all I can taste is the spice!! (And I like canned tuna which my husband thinks is the weirdest thing ever!)

But since I love you guys so much, I’m stepping out of my comfort zone and sharing this amazing recipe with you guys. You’re welcome! haha. I usually make this as a chicken scampi (which really isn’t a thing), so you can totally sub chicken if you also have icky feelings towards those creepy crawly shrimp! Just make sure you add the diced chicken in after the first step so it cooks all the way through!! I will say, that I actually ate a couple pieces of the shrimp from this without wanting to puke, but that was my limit. To make sure it was up to par I had my shrimp loving mom come over to taste test…she took the rest of it home because she liked it so much!

Side Note- My general dislike of seafood includes smelling it. To decrease the amount of time I have to spend around the raw shrimp, I ask the butcher to peel and devein the shrimp for me…and it is well worth the extra $3!!!

Tomato Basil Shrimp Scampi with Zucchini Noodles

Serves 4

Ingredients

  • 3 tablespoons Olive or Avocado Oil
  • 3 tablespoons Ghee (or butter if not dairy free)
  • 4 cloves Garlic (Minced)
  • 1 tablespoon Lemon Zest (1/2 of a lemon)
  • 1/4 cup Lemon Juice (1 Lemon)
  • 1/3 cup Fresh Basil (Chopped)
  • 1/8-1/4 teaspoon Crushed Red Pepper Flakes (to taste)
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Salt
  • 14oz Canned diced tomatoes (drained *make sure they don't have added crap in them!!*)
  • 2-3 Medium Zucchini (Spiralized into noodles)
  • 1lb Raw Shrimp (Peeled and deveined)

Directions

Step 1
Over medium heat, add olive oil and ghee to large saute pan.
Step 2
Once hot, add garlic and cook for 2-3 minutes, until it's nice and fragrant!
Step 3
Add in tomatoes, lemon juice, lemon zest, salt, pepper, red pepper flakes and basil. Cook for 8-10 minutes.
Step 4
Add in zucchini noodles, and cook for 2-3 minutes.
Step 5
Add in shrimp. Cover pan and let cook for 4-5 minutes or until shrimp are pink all the way through.
Step 6
Serve immediately and enjoy!
